  Meat is sold by hanging weight. This is approximately 60% of live weight. We estimate that our steers will weigh 1,400 lbs., which would be 840 lbs. hanging weight on a whole beef.

The packaged beef take-home weight is approximately 65% of the hanging weight. If the hanging weight of a whole beef is 780 lbs., you would take home approximately 507 lbs. of finished beef.

 If you ordered a cross-cut quarter you can expect to receive about: 2 Arm Roasts, 1 Rump Roast, 1 Sirloin Tip Roasts, 5-6 Chuck Roasts, 8 Ribeye, 8 New York Strips or T-Bones, 6 Filets, 4 Sirloins, 55-60 lbs. of ground, 1 Brisket, 1 Flank Steak, 4 Round Steaks, 2lbs Stew Meat.

 When calculating for freezer space, allow about 4-6 cubic feet for a quarter beef. Chest freezers generally use space better than upright freezers.
